Mussels steamed in white wine
Ingredients: 2 kg mussels, cleaned and debearded, 200 ml dry white wine, 50 g butter, 3 shallots, 3-4 garlic cloves, 1 carrots, 1 bay leaf, fresh parsley, black pepper
Instructions:
1. Shallots and the carrots cut into slices, garlic cloves chopped finely.
2. Melt the butter in a saucepan, add the shallots, and cook until translucent. Add the carrots, garlic, bay leaf, parsley and steam for a 5-6 minutes.
3. Pour in the wine and bring to a boil. Add the mussels, immediately cover the pan and steam over a moderate heat, shaking the pan occasionally for 6-7 minutes, until the mussels have opened. Discard the bay leaf, and any mussels that have not opened.
4. Transfer the mussels to a serving bowl, sprinkle with the parsley and with freshly ground black pepper. Serve immediately with slices of bread or with pommes frites.
