After different holidays, when we did not much care for eating right, we ate and drank traditional Hungarian dishes, drinks, it would be desirable to prepare something more healthy.
I love Italian cuisine, its simplicity and sophisticated style. Its ingredients are of high quality, and even a very simple Italian dish can be delicious. Pasta with different sauces is my favourite dish, and its variations depends only on fantasy. One of these dishes is pasta with a sauce made of Gorgonzola cheese.

Tomatoes in Panko crumbs

Leek Soup with Dill - Kapros póréhagymaleves
Ingredients:
3-4 leeks, sliced
2-3 garlic cloves, diced
2-3 tablespoons olive oil
1 tablespoon flour
1,5 l chicken stock
200 ml cream
White pepper, nutmeg, salt, dill, cilantro, lemon juice, chili to taste
Instuctions:
First, clean and chop the leeks and garlic. In a pot saute leeks and garlic in olive oil.
Fry them over a medium heat until the leeks are soft.
This will take about 5 minutes, sprinkle leeks with flour, stir frequently and fry another 2 minutes. Add the chicken stock and bring the soup to a boil and then let it simmer for 5-6 minutes. Pour the cream into the soup, stir well and bring to a boil. Seasoning with freshly ground white pepper and nutmeg, dill, cilantro, salt and lemon juice. Serve with a sprinkle of dill and more lemon slices.

A guacamole – mexikói eredetű, avokádóból készített krém-mártogatós. Vidékenként
más- más módon készítik, az alap az avokádó, a chili és a fokhagyma. Csak érett avokádóból készíthető jó guacamole. Ha az avokádó nem elég érett, újságpapírba csomagolva pár nap alatt megérik, megpuhul. Általában, ellensúlyozandó a chili erősségét, héjától megtisztított, kis kockára vágott paradicsomot is szoktam belerakni, fokhagyma helyett inkább hagymát használok, és sok zöldfűszert keverek bele.

„Orangeproject”
I have my favorite fruits in each season. I prefer cherries and apricots in summer, oranges and bananas in winter. This also applies to vegetables. I believe in seasonality. In summer and autumn, when I have a time, or if I get a larger amount of fruits or vegetables, I am busy with preserving, jam making, cabbage souring. I make dried tomatoes and plums.
We always make “Bishop’s Bread” and fruitcake for Christmas, and for these it is necessary to make or buy candied fruits. But the home-made ones, which my grandmother used to prepare, were significantly better.
This year I began to accomplish my “orangeproject”. I have made candied orange and lemon peels for fruitcakes, dried orange peels for orange salt and orange sugar. Orange salt is excellent for salads and sauces, while I recommend orange sugar for cakes and pies.

Dagasztás nélküli kenyér - No-Knead Bread
Úgy két-három éve foglalkoztat a kenyérsütés gondolata, mert jó minőségű és adalékmentes kenyeret nemigen lehet kapni, szerintem. A kenyérsütő géppel készített kenyerek, amelyeket kóstoltam, nem igazán feleltek meg az elvárásaimnak, valami „rendes”, „igazi” kenyeret akartam.

Shashlik /kebab/ can always be prepared, not only in the summer, but also in the winter. The “picnic” in the winter on snow, in the garden has a special beauty for me. Shashlik can be made from lamb, pork, chicken, but each meat needs its own marinade.
I always prepare shashlik from pork, namely from the pork's neck. Shashlik can be prepared using vinegar, but I use only onions cut into large partially round-shaped pieces.

B Венгрии одним таким магическим блюдом является чечевица. Считают, что мелкие зерна чечевицы символизируют деньги и принесут в новом году богатсво.
Способы приготовления разные, - это может быть суп, салат, гарнир. Предлагаю рецепт салата из чечевицы.
New Year's superstitions are very different, but almost at all nations we find superstition - "a rich table" - that means, at the table should be an abundance of food and drinks, and then in the house the whole year would be plenty.
On the table should be served "magical" meals, symbolizing the coming year. In Hungary, one of such magical dishes, are lentil. One believes, that the fine grains of lentils symbolized money and it will bring richness in the new year.
There are many different ways of preparation - soup, salad, side dish.

Зима - Winter
Хотя Венгрия не является горным местом, но склоны ее невысоких гор в заснеженные зимы очень приемлемы для съездов на лыжах или на сноуборде. Можем сказать, что и у нас зимние виды спорта с каждым годом становятся все более популярными, число поклонников неуклонно растет.
Лыжные центры – благоустроенные, оборудованные современными подъемниками, с возможностями кататься на лыжах детям и начинающим, есть услуга аренды лыж, имеются профессиональные инструктора.
Инфраструктура хорошая, созданы прекрасные условия для отдыха, имеются кафе, рестораны, гостиницы, и все это - на небольших расстояних от Будапешта.
В этом году, после Рождества выпал снег, на улице минусы, значит пора встать с кресла, выключить телевизор или компьютер и выехать на природу кататься на лыжах, на коньках, на сноуборде или просто дышать свежим воздухом и любоваться красотой природы.

Though Hungary is not a mountainous country, the slopes of its low mountains are suitable for skiing and snowboarding in snowy winters. In fact, winter sports are becoming more and more popular each year, and the number of fans is steadily growing.
The ski centres are well-arranged, equipped with modern lifts and facilities for children and beginners. Skiing equipment can be hired, professional instructors are available.
The infrastructure is good: there are cafes, restaurants, hotels, and places to rest quite close to Budapest.

Праздник - Holiday
Все готово к празднику!
Поздравительные открытки отправлены, декорации для дома и для стола сделаны, подарки упакованы. Меню завтрашнего Святого Вечера составлен, правда пока что только у меня в голове, но составляющие приобретены, готовить праздничный ужин и украшать елку будем только после обеда, чтобы к вечеру все было готово.
В Венгрии традиционная еда на Святой Вечер – рыба, чаще всего карп. Так и у нас, на ужин 24 декабря готовим рыбу. На закуску подаем множество самых разных холодных блюд из рыбы - копченого лосося, креветок, икры. После холодных закусок подаем грибы фаршированные сыром горгонзола и так называемый "винный суп" из белого сухого фурминта, особенность которому придают специи. Главные блюда будут - жареный карп в духовке и лосось на гриле, гарнир - картофель и салаты. На десерт подаем разные сухие печенья, фруктовый пирог с ванильным мороженым, печенное в фольге яблоко с корицей.
Пить будем шампанское, разные вина, фруктовый сок и минеральную воду.
Everything is ready for the holiday!
Postcards are sent, decorations for the house and table are made, Christmas gifts are packed. The Christmas Eve menu is ready, though only in my head; all the ingredients have been purchased. We are going to decorate the Christmas tree and prepare the supper only tomorrow afternoon. Everything must be ready before evening.
In Hungary the traditional meal for Christmas Eve is fish, usually carp. It is going to be prepared by us for dinner. We are going to serve different cold dishes as starters: smoked salmon, shrimps, calves. After the cold snack we serve mushrooms stuffed with a gorgonzola cheese and so-called "wine soup" from white dry Furmint, feature to which is given by special spices. The main course is going to be baked carp made in the oven and grilled salmon served with potato and salads. For desert we bake dry cookies, a fruit pie with vanilla ice and baked apple with cinnamon in a foil.
As for drinks, champagne, different wines, fruit juice and mineral water are going to be served.

Gingerbread - Пряники
Christmas baking wouldn't be complete without the cute Gingerbread Figures.
We bake gingerbread every year, when the Christmas is approaching. This is a traditional biscuit in Hungary. Ginger is totally omitted from Hungarian Gingerbread. This is a honey biscuit with cinnamon.

Mussels steamed in white wine - Мидии в белом вине
Mussels steamed in white wine
Ingredients: 2 kg mussels, cleaned and debearded, 200 ml dry white wine, 50 g butter, 3 shallots, 3-4 garlic cloves, 1 carrots, 1 bay leaf, fresh parsley, black pepper
Instructions:
1. Shallots and the carrots cut into slices, garlic cloves chopped finely.
2. Melt the butter in a saucepan, add the shallots, and cook until translucent. Add the carrots, garlic, bay leaf, parsley and steam for a 5-6 minutes.
3. Pour in the wine and bring to a boil. Add the mussels, immediately cover the pan and steam over a moderate heat, shaking the pan occasionally for 6-7 minutes, until the mussels have opened. Discard the bay leaf, and any mussels that have not opened.
4. Transfer the mussels to a serving bowl, sprinkle with the parsley and with freshly ground black pepper. Serve immediately with slices of bread or with pommes frites.

Asparagus Salad - Салат со спаржей
Ingredients: asparagus, soy sauce or salt, tomatoes, green pepper, lettuce, lemon, oil, peppergrass, parsley.
Recipe:
The cleaned asparagus is cooked in salted water, then we let it cool down. The tomatoes are cut to cells, the green pepper to round slices, the lettuce to pieces, then these are mixed. The sauce is made from squeezed, strained lemon, oil and soy sauce. The vegetables are put on top of the asparagus, or mixed with it (in this case the asparagus is also cut to pieces).
